    I don't know about you but I can always use more HEALTHY and SIMPLE during the holiday season. So with the holidays right around the corner, I thought I would share a very simple and healthy vegan breakfast recipe.

    Well, it's not so much a recipe as something that I came up with using two healthy store bought ingredients. I started making this a few months ago and realized it taste very much like pudding- pudding for breakfast! I'm in!

    Pudding is such a comfort food for me. If you feel the same, I have another Vegan Protein Pumpkin Breakfast Pudding recipe that's so delicious. Definitely check that one out!

    Consider this recipe more of a quick, protein-filled, vegan breakfast idea that you can make in less than 5 minutes. Sound good?

    Vegan Breakfast Pudding Ingredients

    Ingredients for Salted Caramel Vegan Breakfast Pudding.

    You really only need a few ingredients to make this salted caramel vegan protein breakfast pudding:

    Silk Dairy-Free Yogurt Alternative Plain
    Tropeaka Lean Protein Powder (Salted Caramel)
    Stevia or sweetener of choice (optional)
    Toppings

    I get the Silk Dairy-Free Yogurt Alternative (plain) from my local Whole Foods and I love it because of it's high protein content. Click HERE to find it near you. A lot of dairy-free yogurts are low in protein, but this one has 10 grams per one cup serving! Just be sure to get the plain if you want to keep the sugar content low.

    I order my Tropeaka Lean Protein Salted Caramel directly from the company. I love all their protein powders, although the salted caramel is my favorite! I am not an affiliate for them, I just thought I would share my favorite vegan protein powder because I have gone though so many in the last few years. Most of the ones I tried caused bloating, but the Tropeaka doesn't and it taste great!

    I sometimes sweeten it with just a tiny amount of stevia. I don't use a lot because the Tropeaka protein powder is already sweetened. You can use any sweetener that you prefer and the amount really depends on the protein powder that you are using.

    Substitutions

    You can absolutely use any yogurt and protein powder combo that you want, just know that the nutrition and taste will be different.

    Another favorite dairy-free yogurt of mine is So Delicious Dairy-Free Coconut Milk Yogurt Alternative (unsweetened vanilla). It's creamy, low in sugar, and you can sweeten it yourself. Also, it's pretty widely available, just note it does not have the high protein content of the silk yogurt.

    To make this delicious pudding-like breakfast, just mix one cup of the Silk Dairy-Free Yogurt Alternative with 2 tablespoons of the Tropeaka Lean Protein Salted Caramel (or protein powder of choice). Then, sweeten with stevia or desired sweetener. Extra sweetener is optional because the protein powder is already sweetened.

    Finally, top with your favorite toppings. Some of my favorites are bananas, blueberries, cherries, peanut butter, coconut flakes, chia seeds- oh my I could just keep going on and on. Toppings are my favorite part!

    • 1 cup Silk Dairy Free Yogurt Alternative see here or yogurt of choice
    • 2 tablespoon Tropeaka Lean Protein Powder Salted Caramel see here or protein powder of choice
    • Toppings of Choice

    Instructions

    • Mix the yogurt and protein powder together in a bowl until well incorporated and smooth.
    • Taste and add additional sweetener if desired.
    • Add favorite toppings.
    • Happy Eating!
