Indulge your sweet tooth (guilt-free) with smooth and creamy silken tofu pudding. Light, sweet, and protein-packed, this healthy dessert is super easy to make. All you need is five minutes and a high-speed blender.
You may be thinking, tofu in pudding?
You bet!
Tofu makes an excellent base for many creamy desserts, such as pudding, custard, and pies. I love tofu in desserts for added protein and nutrients, which no one ever suspects. It's also great to use in place of dairy for no-bake pies.
This tofu pudding recipe is one of my favorite ways to use silken tofu. It's the easiest pudding you'll ever make, and it's made with wholesome ingredients.
So what do you need?
Ingredients
To make silken tofu pudding, you'll need the following ingredients:
- Silken Tofu- Be sure to buy firm or extra firm silken tofu and drain it well.
- Milk- I used unsweetened almond milk, but feel free to use regular dairy milk.
- Old-Fashioned Oats- You can substitute quick oats if that's what you have on hand.
- Maple Syrup- Feel free to substitute any other liquid sweetener, such as honey or agave syrup.
- Stevia- I used Stevia in the Raw and maple syrup to sweeten the pudding. Stevia is a natural sugar substitute with zero calories. There are many different brands on the market, so use whichever you prefer. Just read the label and add the equivalent of 2 tablespoons of sugar. If you choose to omit the Stevia, you can add additional maple syrup.
- Vanilla Extract- Pure vanilla extract works best, although imitation works too.
- Salt- Don't forget a pinch of salt.
Instructions
If you have five minutes and a high-speed blender, you can make this pudding!
Follow these instructions:
- Add the tofu, milk, oats, maple syrup, Stevia, vanilla extract, and salt to a high-speed blender.
- Blend on low for 30 seconds and then on high for one minute or until smooth and creamy. Be sure to scrape down the blender as necessary. The pudding will be thin at this point.
- Pour into serving dishes and refrigerate for 2 hours or until the pudding thickens.

Tofu is full of vitamins and minerals, and unlike other plant proteins, it contains all nine essential amino acids that your body can't make on its own.
Silken tofu is unpressed and is more delicate than regular tofu. It works well in smoothies, creamy desserts, sauces, and dressings. If you can't find silken tofu, you can substitute regular soft tofu.
Silken tofu pudding is best served cold. I like to serve mine with a dollop of fresh whipped cream and berries.
You can make the pudding one day ahead of time. Pour it into individual serving dishes, cover, and refrigerate until ready to serve.

Excellent! Another great recipe from Crystal! I love how tasty this is, and the texture is perfect. I put a couple scoops of my favorite protein powder in it for different flavors and added protein. With tofu, oats, and protein powder I use it as a yummy breakfast or a dessert!

Could you use xanthan gum or agar powder instead of the oats to make it diabetic friendly? Would liquid monk fruit work?

You can certainly use xanthan gum or agar as a thickener instead of oats. I can't give you exact measurements since I haven't tried it myself, so you may have to play around with the recipe. Liquid monk fruit is one of my favorite sweeteners ad will work great here!

I love this recipe! On most mornings, I eat with with breakfast. It's a great alternative to plant-based yogurts, which usually don't contain enough protein to keep me full until lunch time.
My grocery store doesn't carry firm or extra firm silken tofu, just regular silken tofu, so I use that and increase the amount of oats a bit for thickness.
