    I love this tomato soup! Part of the reason is that it's just so easy to make. I make it quite often for lunch on a Monday, so that I can have it throughout the week. I usually pair it with a vegan grilled cheese or roasted vegetables, depending on my mood. This soup is comfort food indeed.

    Can the words comfort and slimming describe the same recipe? Yes they can!

    I get comfort from having a steaming bowl of creamy tomato soup in front of me, especially on a cold day. I like to hold the bowl for a moment before diving in, just to feel the warmth on my hands.

    So where does the slimming part come in?

    This soup is great if you are trying to lose a few pounds or if you are just trying to eat a bit healthier after an overindulgence (I've been there). Each serving has only 80 calories and 2 grams of fat. Not bad, huh?

    Plus, there is about 4 grams of protein per serving due to the addition of silken tofu. If you are like me, you will have at least 2 servings and sprinkle Nutritional Yeast on top. If you haven't tried nutritional yeast, then you simply must. It has a wonderful cheesy flavor and is full of protein and nutrients.

    This recipe requires only 6 ingredients, minus the salt. You will need:

    28 oz can of whole peeled tomatoes
    1 roasted red bell pepper or about ½ cup (jarred works great)
    8 oz silken tofu
    1 garlic clove
    1 tablespoon maple syrup
    1 tablespoon red wine vinegar
    salt to taste

    How to make Slimming Vegan Tomato Soup

    This recipe couldn't get any easier. You simply put everything in a high speed blender and blend. I love my Vitamix because it has a soup option that blends and heats the soup for you.

    It's so satisfying to open the lid and have a steamy hot soup right away. But no worries if you don't have that option. You can simply blend, and then heat on the stove in a saucepan.

    I eat this soup warm, but I bet it would be great cold too. Garnish with fresh basil or thyme and a sprinkle of Nutritional Yeast.

    Ingredients

    • 28 oz whole peeled tomatoes canned
    • ½ cup roasted red bell pepper from a jar is ok
    • 8 oz silken tofu
    • 1 tablespoon red wine vinegar
    • 1 tablespoon maple syrup
    • 1 clove garlic peeled
    • salt to taste

    Instructions

    • Add all ingredients to a high speed blender.
    • If using a Vitamix, blend until heated thoroughly or use the soup option. Alternatively, you can blend until well incorporated and then pour into a saucepan and heat on the stove.
    • Serve warm and garnish with fresh basil or thyme. Sprinkle with Nutritional Yeast for an added cheesy flavor and a protein boost.
