These light vegan cookie dough bites are soft, chewy, and taste just like chocolate chip cookie dough. You would never guess that they're made with oat flour and are vegan and gluten-free. They're absolutely addictive! But that's ok because with reduced fat and calories you can enjoy more.
Do you sneak a bite of cookie dough when making cookies?

Chunks of delicious, "light" vegan cookie dough bites filled with mini chocolate chips. I say "light" because I didn't use a ton of fat and sugar. And while I can't say that cookie dough is necessarily healthy, I can say that this recipe is definitely healthier than a lot of recipes out there.
Why?
This recipe calls for oat flour and coconut oil, and I reduced the amount of sugar and substituted stevia. But don't worry, you can't tell that I have healthified this recipe at all! These little bites taste just like real cookie dough. My kids fought over the last one. Ok, so maybe that was me. 😉

Ingredients for Vegan Cookie Dough Bites
For light vegan cookie dough bites, you will need the following ingredients:
- Oat Flour- If you don't have oat flour on hand, you can make your own by blending old-fashioned oats in a blender until you have a flour consistency. Here is a helpful post on how to make oat flour, or you can substitute all-purpose flour. If you go with all-purpose flour, spread it on a baking sheet and bake it in a 350° oven for 5 minutes and then proceed with the recipe. This will kill any bacteria that may be present.
- Tapioca Flour- Tapioca flour acts as a binder and thickener. It's a great product to have in a vegan kitchen or any kitchen, for that matter. I use this brand, and it's pretty easy to find.
- Coconut Oil- Coconut oil adds some healthy fats to the cookie dough and keeps the bites moist and delicious.
- Vanilla Extract- I use pure vanilla extract, and it imparts a lovely flavor to the recipe.
- Brown Sugar- Go for organic brown sugar if you want to ensure that it's vegan.
- Stevia- I use the Sweetleaf brand in the shaker bottle. If you don't have stevia, you can always add in a bit more brown sugar.
- Almond Milk- I use unsweetened almond milk, but any non-dairy milk should do for this recipe, considering it's such a small amount.
- Vegan Mini Chocolate Chips- I use the Enjoy Life brand. Although there are other non-dairy brands on the market, so just choose your favorite.
- Salt- A pinch of salt is necessary for the best flavor.
Instructions
These cookie dough bites are so easy to make. Just follow these instructions:
- Whisk together the oat flour, tapioca flour, and salt.
- With a hand mixer or a stand mixer fitted with a paddle attachment, cream together the brown sugar and coconut oil.
- Add in the almond milk, vanilla, and half of the dry mixture. Mix on low until incorporated. Add in the rest of the dry mixture and mix on medium until everything is well incorporated.
- Mix in the chocolate chips on low until just incorporated, or you can stir them in by hand.
- Roll the dough into heaping, half tablespoon-size balls and place them on a parchment-lined baking sheet, or even a plate will work. Refrigerate them for 15 minutes to harden.
- Enjoy them straight from the refrigerator, or let them sit at room temperature if you prefer a softer cookie dough bite. My favorite way to enjoy them is as an after-dinner treat paired with an espresso martini- YUM!
Storage
Store your healthy vegan cookie dough bites in an airtight container in the refrigerator for up to a week or in the freezer for up to 2 months. I like to double the recipe and keep some in the freezer for when I need a little something sweet.
