These light pecan pie bites are so delicious, and they have a fraction of the fat and calories that traditional pecan pie does. One of the secrets is swapping out a tradition crust for wonton wrappers. Now don't get me wrong, they don't taste the same as pie crust. But they are super fast, easy to use, and have only 22 calories a piece.
Trust me, the filling is so delicious that you won't miss the crust, and you won't believe how easy they are to make. You can have these on the table in 30 minutes!

Light Pecan Pie Ingredients
For Light Pecan Pie Bites, you will need the following ingredients:
- Wonton Wrappers- Wonton wrappers can easily be found in the refrigerated section of most supermarkets, and in the freezer section of Asian grocery stores. They have only 22 calories a piece!
- Pecans- Be sure to buy chopped pecans or chop them yourself.
- Eggs- You will need 2 large eggs.
- Brown Sugar- When measuring you brown sugar be sure that it's packed.
- Maple Syrup- Maple syrup gives these little bites a wonderful flavor, but you can substitute honey if you prefer.
- Stevia- I use Sweetleaf Stevia from the shaker bottle to reduce the amount of sugar. If you go with a different brand, be sure to read the measurements and add the equivalent of around ⅓ cup of sugar or to your preference.
- Vanilla Extract- Vanilla extract is optional but highly recommended.
- Salt- A pinch of salt helps to bring out all of the other flavors.
How to Make Light Pecan Pie Bites
These pecan pie bites are so easy to make. Simply follow these instructions:
- Preheat oven to 350°F (177°F) and spray a 24 count-count mini muffin pan with nonstick spray. Stack the wonton wrappers and trim the corners (about an inch from the sides, see image above) and press them into the muffin cups.
- Whisk together the brown sugar, stevia, and salt in a medium size bowl. Set aside.
- Whisk together the eggs, maple syrup, milk, and vanilla extract in a medium size bowl.
- Pour the wet mixture into the dry mixture and whisk until thoroughly combined.
- Divide the chopped pecan evenly among the muffin cups. Cover the pecans with the filling, about a tablespoon per cup.
- Bake for 10-12 minutes or until wonton wrappers turn slightly golden brown around the edges. Cool for 5 minutes before removing to a wire rack to cool completely.
Serving/Storage
Serve the pecan pie bites at room temperature or slightly warm with a scoop of light ice cream. YUM! 🙂
These light pecan pie bites are best eaten the same day as the wonton wrappers will soften after a day or so. But if you do have leftovers, store them in an airtight container for up to 4 days.
