Easy Peanut Butter Oat Dog Muffins
Equipment
- 1 6-cup muffin pan This recipe makes 6 muffins. If you're using a 12-cup muffin pan, simply fill 6 of the muffin cups and leave the remaining cups empty.
Ingredients
Muffins
- 1 and ¼ cups oat flour*
- 1 and ¼ teaspoons baking powder
- ⅛ teaspoon salt
- 1 large egg
- ¾ cup unsweetened applesauce
- ⅓ cup peanut butter
- ⅓ cup water
- 1 tablespoon olive oil
Peanut Butter Drizzle
- 2 tablespoons Peanut butter
- ½ teaspoon olive oil
Instructions
For the Muffins
- Preheat the oven to 350ºF and position the oven rack in the upper third of the oven — not all the way at the top, but higher than the center. Baking the muffins in the upper area helps them rise better and brown evenly on top. Line a standard 6-cup muffin tin with paper liners and spray the liners with non-stick spray.
- In a large mixing bowl, whisk together the oat flour, baking powder, and salt. Set aside.
- In a separate bowl, whisk together the egg, applesauce, peanut butter, water, and olive oil.
- Pour the wet ingredients into the dry ingredients and mix together with a large spoon or spatula until combined. Let the batter rest for 4-5 minutes, then give it one more quick stir.
- Divide the batter evenly between 6 muffin cups, filling each liner almost to the top for tall muffins. Bake for 17-19 minutes, or until the tops are set and a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
For the Peanut Butter Drizzle
- In a small microwave-safe bowl, combine the peanut butter and olive oil. Microwave for 10–15 seconds, then stir until smooth.
- Spoon it into a small zip-top bag, snip off a tiny corner, and drizzle over the cooled muffins. Or you can use a small spoon and drizzle it over the muffins if you prefer.
