    Ranger is always close by whenever I'm baking, so I figured it was time he had his own batch of muffins! I topped them with a little peanut butter drizzle and one of my homemade Peanut Butter Oat Dog Treats for an extra cute finish. Trust me, your pup will think they're just as exciting as the muffins you're making for yourself.

    • Peanut Butter: Use a natural peanut butter with no xylitol, which is toxic to dogs. Creamy peanut butter works best in this recipe.

    Whisk together the oat flour, baking powder, and salt until everything is evenly combined.

    In a separate bowl, whisk together the egg, peanut butter, applesauce, water, and olive oil until smooth and creamy.

    Add the dry ingredients to the wet ingredients and stir just until no dry streaks remain. The batter will be thick but easy to stir.

    Equipment

    • 1 6-cup muffin pan This recipe makes 6 muffins. If you're using a 12-cup muffin pan, simply fill 6 of the muffin cups and leave the remaining cups empty.
    • 1 12-cup muffin pan

    Ingredients

    Muffins

    • 1 and ¼ cups oat flour*
    • 1 and ¼ teaspoons baking powder
    • ⅛ teaspoon salt
    • 1 large egg
    • ¾ cup unsweetened applesauce
    • ⅓ cup peanut butter
    • ⅓ cup water
    • 1 tablespoon olive oil

    Peanut Butter Drizzle

    • 2 tablespoons Peanut butter
    • ½ teaspoon olive oil

    Instructions

    For the Muffins

    • Preheat the oven to 350ºF and position the oven rack in the upper third of the oven — not all the way at the top, but higher than the center. Baking the muffins in the upper area helps them rise better and brown evenly on top. Line a standard 6-cup muffin tin with paper liners and spray the liners with non-stick spray.
    • In a large mixing bowl, whisk together the oat flour, baking powder, and salt. Set aside.
    • In a separate bowl, whisk together the egg, applesauce, peanut butter, water, and olive oil.
    • Pour the wet ingredients into the dry ingredients and mix together with a large spoon or spatula until combined. Let the batter rest for 4-5 minutes, then give it one more quick stir.
    • Divide the batter evenly between 6 muffin cups, filling each liner almost to the top for tall muffins. Bake for 17-19 minutes, or until the tops are set and a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

    For the Peanut Butter Drizzle

    • In a small microwave-safe bowl, combine the peanut butter and olive oil. Microwave for 10–15 seconds, then stir until smooth.
    • Spoon it into a small zip-top bag, snip off a tiny corner, and drizzle over the cooled muffins. Or you can use a small spoon and drizzle it over the muffins if you prefer.

    2. Storage: Store the muffins in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 1 week.
    3. To Freeze: Let the muffins cool completely, then freeze them without the peanut butter drizzle or dog treat topper in an airtight container or freezer-safe bag for up to 3 months. Thaw at room temperature, then add the drizzle and topper just before serving, if desired.
