Who doesn't love mug cake? I mean. Come on. It's a cake. In a cute little mug. That you don't have to share. And it takes 5 minutes to make- what's not to love?
And don't worry if you've tried a bad mug cake recipe before. I assure you that this cake turns out moist and full of flavor. It's also made with simple ingredients that you may already have at home. Check your cupboard for these ingredients:
Vegan Funfetti Mug Cake Ingredients:
For vegan funfetti mug cake , you will need the following ingredients:
- All-Purpose Flour- Whole wheat pastry flour will work as well.
- Canola Oil- Or any flavorless vegetable oil. If you decide to go with coconut oil, just be sure that you measure out 1 tablespoon of melted coconut oil.
- Granulated Sugar- If your sugar is organic, then you know it's vegan. This one is available through Amazon. Granulated Erythritol works as well if you prefer sugar free.
- Vanilla Extract- Without the vanilla extract, your cake will turn out quite bland.
- Salt- A pinch of salt really brings out the vanilla flavor in the cake.
- Baking Powder-Baking powder is necessary for the cake to rise.
- Sprinkles- Sprinkles are sometimes vegan, but not always. Definitely steer clear of confectioners glaze, which contains insect byproducts (say what?). How to Make Vegan Funfetti Mug Cake
To make vegan funfetti mug cake, follow these simple instructions:
- In a 10 ounce mug, mix together the flour, sugar, salt, and baking powder until well incorporated.
- Next stir in the water, oil, and vanilla, being careful not to over mix. Then stir in the sprinkles.
- Microwave for 50-60 seconds or until top is (almost) dry. Be careful not to over cook.
- Cool for 1 minute and top with non-dairy whipped cream and extra sprinkles.
Mug Cake Tips
- The strength of individual microwaves can vary, so you may have to experiment to get the perfect time for your mug cake. It's better to under cook a bit (my preference) than to overcook. And you don't have to worry about raw eggs- I love vegan!
- I find a 10 ounce mug to be the perfect size, but you can use a larger mug or even a microwavable bowl. Your cake may not rise to the top, but will still taste amazing!
- If you want to remove your cake from the mug, then you need to mix everything in a separate bowl. Then pour the batter into a greased mug. It should pull away from the sides so that you can remove it after cooking.
