    Easy Vegan Coconut Rice

    This Easy Vegan Coconut Rice is one of my favorite recipes and it's so easy to make! It's the perfect accompaniment to your next curry dish and also quite delicious on it's own!

    I LOVE curry, any type of curry- I mean I could eat it breakfast and I have! I came up with Easy Vegan Coconut Rice to go with my favorite curry dishes. If you haven't had sweet coconut rice with spicy curry yet, then you are missing out! You must try that combination SOON!

    This easy vegan coconut rice is a sticky, sweet rice with a subtle coconut flavor. Best of all, it takes no longer to make than regular rice and it requires only four ingredients- Jasmine rice, coconut milk, sugar, and salt. Now most of the time I use light coconut milk, although if I am feeling decadent I will use full fat- the result will be a richer creamier rice.

    You can also play around with the amount of sugar in the recipe. I find that 2 tablespoons is the perfect amount of sweetness to balance a spicy curry, but feel free to use more or less, depending on how you plan to serve it. I also use stevia from time to time if I want to make an even lighter version. The SweetLeaf brand is great- you would substitute ⅔ teaspoon from the shaker bottle or three packets in place of the sugar. Click HERE to find the SweetLeaf brand near you.

    Like I said, this is so EASY to make. You are going to stir the ingredients together in a small pot and heat on high. Once the coconut rice barely begins to boil, cover and turn down to low. Simmer on low for about 15 minutes, stirring once or twice. Check after 15 minutes and if most of the liquid is absorbed, it's finished cooking. If not, give it a couple minutes more.

    Ingredients

    • 1 cup jasmine rice
    • 13.5 oz light coconut milk Buy Here
    • 2 tablespoon sugar see notes
    • ⅛ teaspoon salt

    Instructions

    • Add ingredients to a small pot with a lid and stir to combine.
    • Turn heat to high. When it barely begins to boil, turn down to low and cover.
    • Simmer on low for 15 minutes, stirring once or twice. Check after 15 minutes and if most of the liquid is absorbed, it's finished. If not, cook a few minutes more. 
    • Remove from heat and enjoy!

    Notes

    2 tablespoons of sugar results in a slightly sweet rice. Use more or less to suit your taste.
    For a sugar free version, you can replace the sugar with stevia. I use the SweetLeaf brand- ⅔ teaspoon from the shaker bottle or 3 packets in place of the sugar.
    Store leftover rice in the refrigerator for up up 5 days.
