Easy Vegan Coconut Rice
This sticky, sweet coconut rice is the perfect accompaniment to your next curry dish. Have it on the table in less than 20 minutes!

- 1 cup jasmine rice
- 13.5 oz light coconut milk Buy Here
- 2 tablespoon sugar see notes
- ⅛ teaspoon salt
Add ingredients to a small pot with a lid and stir to combine.
Turn heat to high. When it barely begins to boil, turn down to low and cover.
Simmer on low for 15 minutes, stirring once or twice. Check after 15 minutes and if most of the liquid is absorbed, it's finished. If not, cook a few minutes more.
Remove from heat and enjoy!
2 tablespoons of sugar results in a slightly sweet rice. Use more or less to suit your taste.
For a sugar free version, you can replace the sugar with stevia. I use the SweetLeaf brand- ⅔ teaspoon from the shaker bottle or 3 packets in place of the sugar.
Store leftover rice in the refrigerator for up up 5 days.
