Silken Tofu Pudding (Easy)

Indulge your sweet tooth (guilt-free) with smooth and creamy silken tofu pudding. Light, sweet, and protein-packed, this healthy dessert is super easy to make. All you need is five minutes and a high-speed blender.

Ingredients

  • 12 oz firm silken tofu drained and patted dry
  • cup milk of choice
  • ¼ cup old-fashioned oats or quick oats
  • 2 tablespoons maple syrup or honey
  • 3 packets stevia in the raw* or additional maple syrup, see notes
  • 2 teaspoons vanilla extract
  • teaspoon salt

Instructions

  • Add the tofu, milk, oats, maple syrup, stevia, vanilla extract, and salt to a high-speed blender.
  • Blend on low for 30 seconds and then on high for one minute or until smooth and creamy. Be sure to scrape down the blender as necessary. The pudding will be thin at this point.
  • Pour into serving dishes and refrigerate for 2 hours or until the pudding thickens.
  • Enjoy!

Notes

  1. Stevia- I used Stevia in the Raw and maple syrup to sweeten the pudding. Stevia is a natural sugar substitute with zero calories. There are many different brands on the market, so feel free to use whichever you prefer. Just read the label and add the equivalent of 2 tablespoons of sugar. If you choose to omit the Stevia, you can add additional maple syrup. 
  2. Store your silken tofu pudding covered in the refrigerator for up to four days.
