Cheerful Cherry Cobbler (healthy, easy, vegan)

Fresh, sweet cherries in a cake-like topping make this CHEERFUL CHERRY COBBLER extra special! It reminds me more of a cherry bread pudding than a cobbler. Even better, this cherry cobbler is healthy, gluten-free, vegan, and easy to make.

For the Cherry Filling

  • 4 cups fresh sweet cherries* pitted and sliced in half
  • 5 tablespoons water divided
  • 1/4 cup granulated sugar of choice* see notes
  • 1 tablespoon cornstarch

For the Batter

  • 1/3 cup coconut oil, refined
  • 1 and 2/3 cup oat flour*
  • 2/3 cup granulated sugar of choice*
  • 2 teaspoons baking powder
  • 2 teaspoons cornstarch
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 and 1/3 cups almond milk, unsweetened or milk of choice
  • 2 teaspoons vanilla extract


Prep Oven

  • Preheat the oven to 350°F and set aside a 10-inch round or a 9x11 baking dish. If you use a pie plate, be sure it's a deep dish.

Make the Filling

  • Pit the cherries and slice them in half. In a small bowl, stir together one tablespoon of cornstarch and two tablespoons of water. Set aside. Add the cherries, granulated sugar, and the remaining three tablespoons of water to a medium-size saucepan and bring to a boil. Reduce heat to medium and stir in the cornstarch slurry. Simmer for about 5 minutes or until the mixture is thickened slightly. Remove from heat.

Make the Batter

  • In a large bowl, whisk together the oat flour, granulated sugar, baking powder, cornstarch, cinnamon, and salt. Stir in the almond milk and vanilla extract until relatively smooth, breaking up any lumps. Set aside.

Put the Cobbler Together

  • Melt the coconut oil and pour it into the bottom of your baking dish. Pour the batter on top of the oil. Do not stir. Spoon the cherry mixture evenly (with the juice) on top of the batter. Do not stir that either.
  • Bake for 55-70 minutes or until the batter is set and slightly golden. Remove from the oven and allow to cool for at least 15 minutes.
  • Enjoy warm with a scoop of ice cream or whipped topping.


  1. Cherries- Use fresh sweet cherries when they are available. This cherry pitter makes pitting the cherries a breeze! If you can’t find fresh, frozen will work too. Just thaw them and pat them dry before slicing them in half. 
  2. Oat Flour– Oat flour is sold in stores, but it’s also super easy to make at home. Simply blend old-fashioned oats in a high-speed blender until the oats become a fine powder (about 30 seconds to a minute). Store your oat flour in an air-tight container for up to three months.
  3. Sugar of Choice– You can use regular granulated sugar or granulated erythritol (like I did) for sugar-free. Please note that granulated erythritol is about 70 percent as sweet compared to sugar, so you may want to add a little extra. Coconut sugar is another great option. 
  4. Store your cherry cobbler at room temperature for up to a day or in the refrigerator for up to 5 days.
