Light Pecan Pie Bites

These light pecan pie bites are so easy to make, and they have a fraction of the calories of a traditional slice of pie. They are the perfect healthy holiday treat!

Ingredients

  • 24 wonton wrappers*
  • ¼ cup brown sugar packed
  • 2 teaspoons stevia*
  • ¼ teaspoon salt
  • 2 large eggs
  • cup maple syrup
  • ¼ cup milk
  • 2 teaspoons vanilla extract optional
  • 1.5 cups chopped pecans

Instructions

  • Preheat oven to 350°F (177°F) and spray a 24 count-count mini muffin pan with nonstick spray. Stack the wonton wrappers and trim the corners (about an inch from the sides, see image in post) and press them into the muffin cups.
  • Whisk together the brown sugar, stevia, and salt in a medium bowl. Set aside.
  • Whisk together the eggs, maple syrup, milk, and vanilla extract in a medium size bowl.
  • Pour the wet mixture into the dry mixture and whisk until thoroughly combined.
  • Divide the chopped pecan evenly among the muffin cups. Cover the pecans with the filling, about a tablespoon per cup.
  • Bake for 10-12 minutes or until wonton wrappers turn slightly golden brown around the edges. Cool for 5 minutes before removing to a wire rack to cool completely.
  • Serve at room temperature or slightly warm with a scoop of light ice cream.

Notes

  1. Wonton Wrappers- Wonton wrappers can easily be found in the refrigerated section of most supermarkets and in the freezer section of Asian grocery stores. 
  2. Stevia- I use Sweetleaf Stevia from the shaker bottle to reduce the amount of sugar. If you go with a different brand, be sure to read the measurements and add the equivalent of around ⅓ cup of sugar or to your preference. 
  3. These light pecan pie bites are best eaten the same day. Store them in an airtight container at room temperature for up to 4 days.
