Vegan Funfetti Mug Cake

Ingredients

  • 4 tablespoon All-Purpose Flour
  • 1 tablespoon Canola Oil* or other flavorless oil
  • ¼ cup water
  • 2 ½ tablespoon granulated sugar* or granulated erythritol for sugar free
  • ½ teaspoon vanilla extract
  • teaspoon salt
  • ½ teaspoon baking powder
  • 1 tablespoon sprinkles*

Instructions

  • In a 10 ounce mug, mix together the flour, sugar, salt, and baking powder until well incorporated.
  • Next stir in the water, oil, and vanilla, being careful not to over mix. Then stir in the sprinkles.
  • Microwave for 50-60 seconds or until top is (almost) dry. Be careful not to over cook.
  • Cool for 1 minute and top with non-dairy whipped cream and extra sprinkles.

Notes

  1. The strength of individual microwaves can vary, so you may have to experiment to get the perfect time for your mug cake. It's better to under cook a bit (my preference) than to overcook. And you don't have to worry about raw eggs- I love vegan!
  2. I find a 10 ounce mug to be the perfect size, but you can use a larger mug or even a microwavable bowl. It just may not rise to the top, but will still taste amazing!
  3. If you want to remove your cake from the mug, then you need to mix everything in a separate bowl. Then pour the batter into a greased mug. It should pull away from the sides so that you can remove it after cooking. 
  4. Canola Oil- You can substitute any other flavorless oil, such as refined coconut oil (melted). 
  5. Sugar- If your sugar is organic, then you know it's vegan. This one is available through Amazon. 
  6. Sprinkles- Vegan sprinkles are available through Amazon, and some store bought sprinkles are accidentally vegan. This post is very informative.
