28ozwhole peeled tomatoescanned
½cuproasted red bell pepperfrom a jar is ok
8ozsilken tofu
1tablespoonred wine vinegar
1tablespoonmaple syrup
1clovegarlicpeeled
saltto taste
Instructions
Add all ingredients to a high speed blender.
If using a Vitamix, blend until heated thoroughly or use the soup option. Alternatively, you can blend until well incorporated and then pour into a saucepan and heat on the stove.
Serve warm and garnish with fresh basil or thyme. Sprinkle with Nutritional Yeast for an added cheesy flavor and a protein boost.
