Vegan Protein Pumpkin Breakfast Pudding

Ingredients

  • ½ cup pumpkin canned
  • 2 tablespoon chia seeds
  • 1 tablespoon vegan protein powder I use Tropeaka Lean Vanilla
  • ¼ teaspoon cinnamon
  • 1 cup almond milk
  • stevia or sweetener of choice to taste
  • pinch salt optional

Instructions

  • Mix chia seeds and almond milk in a container with a lid.
  • Add the rest of the ingredients and mix thoroughly.
  • Cover and refrigerate for at least 2 hours or overnight.
  • Happy Eating!

Will keep in the refrigerator for up to 4 days.
